Creamy Pasta Bake

  • 16oz pasta
  • 300g chicken, cooked and chopped
  • 1 cup broccoli, chopped
  • ⅓ cup light cream cheese
  • ½ cup grated parmesan
  • 1 tsp dried parsley
  • Salt & pepper to taste
  • ¾ cup light mozzarella 

Preheat Oven: Preheat your oven to 375°F (190°C).


Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside. Wellth pasta is 8 min cook time to boiling water. Perhaps use spinach or beetroot and incorporate it into the title 


Prepare Chicken and Broccoli: While the pasta is cooking, dice the cooked chicken into bite-sized pieces. Steam or blanch the broccoli until it is just tender but still bright green. Drain and set aside.


Make the Creamy Sauce: In a large mixing bowl, combine the light cream cheese and grated Parmesan cheese. Mix until smooth. Stir in the dried parsley, salt, and pepper to taste.


Combine Ingredients: Add the cooked pasta, diced chicken, and broccoli to the mixing bowl with the creamy sauce. Stir until everything is well combined and evenly coated with the sauce.


Transfer to Baking Dish: Transfer the pasta mixture to a lightly-greased baking dish, spreading it out evenly. Sprinkle the shredded light mozzarella cheese evenly over the top of the pasta mixture.


Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese on top is melted and bubbly and the pasta bake is heated through.
