Quick & Easy Protein Packed Pasta

  • 8 oz pasta
  • ½ cup cottage cheese
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 15 oz can diced tomatoes
  • ½ cup pasta water

  1. Prepare the Pasta: Cook your pasta following the package instructions. Before draining, reserve one cup of the pasta water. 
  2. Sauté the Garlic: Heat olive oil in a large saucepan over medium-low heat. Add minced garlic and sauté for about 3 minutes until fragrant.
  3. Cook the Tomatoes: Add the tomatoes to the saucepan. Increase the heat to medium-high and simmer for 10-12 minutes, or until most of the liquid has evaporated.
  4. Blend the Sauce: Carefully transfer the tomatoes, cottage cheese, and 1/2 cup of the reserved pasta water to a blender. Blend until smooth. If the mixture is too thick, add a bit more pasta water to reach your desired consistency. 
  5. Combine and Season: Toss the cooked pasta with the creamy tomato sauce. Season with salt to taste.

For extra protein, serve with chicken breast or vegetarian meatballs.

Quick Tip: For an even faster meal, just blend the cottage cheese with your favorite store-bought pasta sauce.
