- 8 oz pasta
- ½ cup cottage cheese
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 15 oz can diced tomatoes
- ½ cup pasta water
- Prepare the Pasta: Cook your pasta following the package instructions. Before draining, reserve one cup of the pasta water.
- Sauté the Garlic: Heat olive oil in a large saucepan over medium-low heat. Add minced garlic and sauté for about 3 minutes until fragrant.
- Cook the Tomatoes: Add the tomatoes to the saucepan. Increase the heat to medium-high and simmer for 10-12 minutes, or until most of the liquid has evaporated.
- Blend the Sauce: Carefully transfer the tomatoes, cottage cheese, and 1/2 cup of the reserved pasta water to a blender. Blend until smooth. If the mixture is too thick, add a bit more pasta water to reach your desired consistency.
- Combine and Season: Toss the cooked pasta with the creamy tomato sauce. Season with salt to taste.
For extra protein, serve with chicken breast or vegetarian meatballs.
